Scarsdale Diet - Lamb Stew Recipe
This is a great one if you need to entertain during your diet.
Ingredients (serves 4)
- 1/2 pound of stewing lamb (leanest possible cut with all visible fat removed)

- 2 carrots

- 2 meduim onions

- 2 green peppers

- 2 large tomatoes

- Seasoning
-
- Bouillon or sugar free tomato juice

Method
- Slice/chop all vegetables
- Broil lamb and place in saucepan with vegetables and seasoning
- Cook over a low heat for one hour until meat is tender
- Add tomato juice or bouillon while cooking to keep moist
- Allow to stand for 15 minutes
- Can be served immediately or reheated later
