Scarsdale Diet - Devilled Shrimp Recipe
This one's great if you like shrimp, perfect for everyday use.
Ingredients (serves 1-2)
- 5 extra large or 7 large uncooked shrimps, peeled and deveined

- 2 tablespoons dry white wine

- 1 tablespoon Dijon mustard

- 1 clove of garlic

- 1/4 cup of onion

- Salt & pepper

- 1 small tomato

- 1/4 cup parsley

Method
- Crush the garlic, dice the onion, peel the tomato and chop the parsley
- Coat a skillet with non-stick vegetable spray
- Heat and add shrimps, sauteing on each side for 2 minutes
- Add wine, mustard, garlic, onion, salt and pepper
- Cover and cook on a meduim heat for 10 minutes
- Add tomato, breaking it up with a fork
- Mix well, cover and cook for a further 10 minutes
- Add parsley and serve immediately
